I thought there should be a branch that always have the latest bug fixes for the current stable release, that what the releases branch was created for, shouldn't it?

That's exactly the purpose of the "master" branch. It contains the very latest stable release and receive hot-fixes from any development branch.

Every time we want to release, we simply name a tag of the master branch.

On GitHub this is even simpler using the integrated "Releases" tool:

Interesting, didn't know that. Have now created a release for the old official 1.0.0 Beta 5 and will use the tool for the next release 1.0.0.

Regarding the future backends (e.g. D3D11): Is there a compile-time option to disable the ones we don't need?

Not yet because at the moment there's still one but, of course, there will be some options to disable them.
